It’s a true southern treat that’s mouthwateringly delicious and full of rich buttery goodness.
Ingredients:
- 3 cups of sugar
- 1 ½ cups of shortening
- 3 cups of flour
- 6 eggs
- 1 ½ teaspoons of baking powder
- 1 ½ teaspoons of vanilla
- 1 ½ cups of milk
Caramel Icing:
- 1 can of Eagle Brand milk (14 ounces)
- 1 teaspoon of vanilla
- 1 cup of white sugar
- 1 cup of brown sugar
- 1 stick of butter
Caramel Cake Baking Steps:
- Preheat your oven to 350 degrees.
- In a large bowl, combine your sugar and shortening and mix until it’s smooth, then add all remaining cake ingredients and incorporate thoroughly.
- Pour the batter equally into two round non-stick baking pans lightly coated with baking spray.
- Bake for 40 minutes or until your cakes pass the “toothpick test”. Cool the cakes completely before icing them.
Icing Preparation:
- Add all your icing ingredients to a small sauce pan over a low heat and cook for two minutes until the mixture is thick and creamy (stir continuously).
- Remove the pan from the heat and let it sit until it cools and thickens up slightly.
- Place one of your cake layers onto a plate and pour half of the icing over it, then stack the second layer on top and pour the remaining icing over it.
Tip: Be sure to pour the icing when it's still warm and not fully "set up". If it starts to run too much off the sides of the cake use a butter knife to scrape it back until it sets properly.
