Diabetic Carrot Cake Recipe


Have you been searching for a tasty diabetic carrot cake recipe?

One of my favorite uncles is diabetic and he simply adores this cake when my aunt makes it for him.

If you or one of your loved ones has been hankering for a delicious slice this recipe is definitely one you’re going to want to try!

This recipe makes twelve to sixteen servings.


Ingredients:

  • 1 ¼ cup of raisins
  • ½ cup of water
  • 10 packets of sugar substitute
  • ½ cup of canola oil
  • 1 teaspoon of vanilla extract
  • 1½ teaspoons of freshly ground cinnamon
  • ½ teaspoon of allspice
  • 1 teaspoon of baking soda
  • 1 tablespoon of baking powder
  • 1½ cups of all-purpose flour
  • ½ cup of whole wheat flour
  • 3 cups of finely grated carrots
  • 1¼ cup of unsweetened applesauce
  • ¾ cup of egg substitute
You’ll also need baking spray oil for your pan.


Diabetic Cake Recipe Baking Steps:

  1. Heat your oven to 350 degrees.
  2. In a small saucepan combine your raisins, water and two packets of your sugar substitute. Use medium heat to simmer the mixture until all the liquid is absorbed (stirring occasionally). Take the saucepan off the fire and set it aside to cool.
  3. Take a large mixing bowl combine your cooked raisins, oil applesauce, grated carrots, egg substitute and vanilla.
  4. In a second bowl, combine the remaining sugar substitute, freshly ground cinnamon, baking soda, baking, powder, whole wheat and all purpose flour and allspice and mix together thoroughly.
  5. Add your dry ingredients to your wet ingredients and mix thoroughly to combine.
  6. Pour the entire mixture into a 9 x 13 non stick baking pan lightly coated with caking spray. Bake for 30 minutes.

Serve this cake right out of the oven or at room temperature.
