Healthy Carrot Cake Recipe
A healthy carrot cake recipe!? Is there really such a thing?
Of course, and it is right here with this tasty cake recipe that’s as high in fiber as it is delicious.
Ingredients:
- 2 cups freshly grated carrots
- 3/4 cup whole wheat flour
- 3/4 cup cake flour
- 2 tablespoons poppy seeds
- 1 tablespoon freshly ground cinnamon
- 1/4 cup vegetable oil
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 tablespoons molasses
- 1/2 cup packed brown sugar
- 2 eggs
- 1 orange (juice and zest)
- 1 1/2 teaspoons grated lemon zest
- 1/2 cup raisins
- 5 dried figs (roughly chopped)
- 1/4 cup chopped pecans
Healthy Carrot Cake Baking Steps:
- Preheat your oven to 350 degrees.
- Combine all your dry ingredients in a large mixing bowl. Make a well in the middle and add your molasses, orange juice, oil and eggs. Mix until the ingredients are integrated completely then add the orange zest, lemon zest, raisins, figs, poppy seeds, carrots and pecans. Mix all ingredients together thoroughly.
- Pour the entire mixture into a non-stick 9 inch Bundt pan lightly coated with baking spray.
- Bake for 65 minutes or until your cake passes the “toothpick test”.
- Cool completely before turning the cake out of the pan.
- Serve as is or with cream cheese frosting.
