Vegan Carrot Cake Recipe

Try this simple recipe. It has zero eggs, zero butter, is low in fat but it’s one hundred percent delicious!
Ingredients:
- 2 cups freshly grated carrots
- 1 cups soy or rice milk
- 1 1/2 cups applesauce
- 1 cup grade b maple syrup
- 2 cups white or whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1/2 cup crushed walnuts
Tip: Don’t like nuts? Leave them out.
Vegan Carrot Cake Baking Steps:
- Preheat your oven to 350 degrees.
- In a large mixing bowl, combine all the dry ingredients and set it aside.
- Add the freshly grated carrots and your wet ingredients to the bowl and fold until everything is incorporated.
- Pour the mixture into a 13 x 19 x 2 non-stick baking pan lightly coated with baking spray and bake for 45 minutes or until your cake passes the “toothpick test”.
- Remove your cake from the oven and cool for at least 30 minutes before serving, with or without your choice of frosting.
