You read right. Get ready for your taste buds to tingle because that’s the effect this delicious carrot cake tends to have!


Ingredients:

  • 6 cups freshly grated carrots
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup crushed pineapple
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 cup raisins
  • 4 eggs
  • 1 1/2 cups white sugar
  • 1 teaspoon salt
  • 4 teaspoons freshly ground cinnamon
  • 1 cup chopped walnuts
Tip: Leave the nuts out if you want to.


World Best Carrot Cake Baking Steps:

  1. Preheat your oven to 350 degrees.
  2. Mix your freshly grated carrots and sugar in a bowl and let sit for an hour. After the hour has passed add your raisins to the mixture.
  3. In a large bowl combine your eggs (beaten), sugar, vanilla, oil and pineapple. Add the flour, baking soda, cinnamon and salt and mix thoroughly. Add the carrot mixture and completely incorporate both.
  4. Take two 10 inches round non-stick baking pans and coat them lightly with baking spray. Pour half of the carrot cake mixture into each pan.
  5. Bake for 45 minutes or until your cake passes the “toothpick test”.
  6. Cool completely and serve with cream cheese frosting.
